Creating delicious and nutritious salads using fresh vegetables from the Ludlow Farmers Market is a wonderful way to support our local farmers and enjoy seasonal produce at its peak. Here are five vibrant salad ideas that you can easily whip up:

1. Summer Tomato and Basil Salad
   - Ingredients: ripe tomatoes, fresh basil leaves, mozzarella cheese, extra virgin olive oil, balsamic vinegar, salt, and pepper.
   - Directions: Slice tomatoes and mozzarella, arrange them on a plate, sprinkle torn basil leaves on top, drizzle with olive oil and balsamic vinegar, and season with salt and pepper. A simple yet classic dish that celebrates the flavors of summer. 

2. Rainbow Chopped Salad

5. Roasted Beet and Goat Cheese Salad
   - Ingredients: roasted beets, mixed greens, goat cheese, walnuts, balsamic vinegar, honey, Dijon mustard, olive oil, salt, and pepper.
   - Directions: Arrange roasted beet slices on a bed of mixed greens, crumble goat cheese on top, sprinkle with walnuts.
